The University of Edinburgh CVA Food and Nutrition Workshop 2022

When the Performance Sport department of the UoE contacted their colleagues in the Sports Union and told them how our workshops went, I was asked by them to deliver another workshop. This time to the coaches and committee members of the Coaching and Volunteering Academy.

Nutrition basics, including planning, budgeting, shopping as well as cooking and eating some tasty recipes. 

What did the CVA have to say about my work? 

"Ian delivered a Nutrition Workshop for the Coaching and Volunteering Academy, tailored to educate students on the importance of nutrition to a healthy lifestyle. The group enjoyed cooking along with Ian and learning quick, balanced and delicious recipes. The workshop was informative and engaging, resulting in a tasty dinner as well!"

Dough Pizzeria Menu Analysis 2021

This Edinburgh-based and well-regarded pizzeria are proud of their own pizza crust recipe and the resulting menu items. 

I was asked to analyse the menu, providing a complete breakdown of nutrition, not just the calories! 

What did Dough have to say about my work? 

"Ian provided us with the much-needed nutritional values for our Menu. We decided to get a head start on changing legislation but had no idea how to start. Luckily, Ian was able to help and provided an extremely professional and timely service. He took care of absolutely everything and took the head ache out of producing this information."

The University of Edinburgh Food Skills and Nutrition Workshops 2021

After delivering workshops for the University of Edinburgh Performance Sport students in person in 2019, I was called upon again to deliver online versions in 2021. 

These hour-long workshops were set up to cover how to cook simple meals, including the template for their construction so that students could experiment with their own ideas. During this cook-along session, nutrition information was also delivered with an emphasis on sports performance.

The Croft Carbon College Sustainable Food Traineeship 2020

My first project to make it onto the website! 

After volunteering with the Leith Community Crops in Pots - a community education project funded by the Climate Challenge Fund - I was asked to provide an online course in sustainable food and cooking. 

A first - and quite large - video project for me, I am proud of the result. I wrote, purchased, compiled, filmed, cooked and edited everything here. The video work was all done on mobile phone. 

I hope that people will pay the modest amount for this course - it is a 12-part series totalling about an hour and 15 minutes.

What did the Leith Community Crops in Pots charity have to say about my work? 

"Ian has been part of our community since April 2020. He started volunteering with us working non-stop as a chef cooking healthy meals for our Leith Community Food Support Scheme (Covid-19 response), feeding over 100 vulnerable individuals in Leith that were self-isolating. Then he became a student of our 7 Easy Steps to a Greener You programme, where he didn't miss a single lesson. Most recently he recorded a set of 12 Online Workshops for us named Sustainable Food Traineeship which we have available on our website. He has exceeded on his efforts and delivered what we consider a world-class course! It’s a traineeship that provides the knowledge to plan, buy, cook, and store food well. Ian believes that for a diet to be sustainable it has to be sustainable for you (enjoyable, fits with your culture and tradition, sufficient, accessible, and nutritious) and sustainable for the planet (doesn’t exceed what the environment can provide).  Ian is a professional chef, personal trainer, nature lover, and holds a MSc in Public Health and nutrition. All this expertise has made our experience of working with him very fruitful and enjoyable. Most importantly for us, he has a huge heart and infinite passion that is reflected in his work. We will be forever grateful for his contributions!"
